Hashbrown Breakfast Sandwich | White Thunder BBQ

I saw a sandwich like this on some Yahoo article but forgot where it was from....somewhere in California I think.  Anyways, this sandwich was awesome and if you are out of muffins/biscuits its a perfect idea.  I really hope you give this breakfast sandwich a try.



Using a griddle cook up two slices of bacon (cut in half) and two hash brown patties.  When the hash browns are nice and crisp, put 1 slice of American cheese on each.








Fry/cook up an egg any way you like.










Chop up some chives onto the cheese side of each hash brown.
Assemble sandwich:
Hash Brown - Cheese - Chives - Bacon - Egg - Bacon - Chives - Cheese - Hash Brown.  Wrap in Foil and enjoy!





Ingredients (per sandwich)
2 Potato Patties
2 Slices of bacon (cut in half)
2 Slices of American Cheese
1 Egg
2 Pinches of Chives
Salt + Pepper

BBQ Bacon Wrapped Chicken Nuggets Recipe - Quick Appetizer on the Weber Go Anywhere

A quick and easy appetizer, these bacon wrapped chicken chunks lasted about 5 minutes after they came off the grill.  With the amount of coals that I used there was plenty of charcoal left for the main course - BURGERS!

The Weber Go Anywhere grill is a little work-horse.  Even in the snow it smoked these little chicken nuggets at ease.  I bank lump charcoal on one side, threw some hickory chips on the top and lit about 20 briquettes to do a slow cook.  I was kind of a psuedo-snake method.
The rub recipe is just enough to do 2 chicken breasts, double it if you want to do a larger batch.


The Rub
1/2 t Freshly Cracked Black Pepper
1/2 t Kosher Salt
1/2 t Cumin
1/8 t White Pepper
1/2 t Ancho Chili Powder
1/4 t Granulated Garlic
1/4 t Granulated Onion
1 T Turbinado Sugar

2 Chicken Breasts
1/2 lb of Thin Cut Bacon

Shake Shack ShackMeister Dog Recipe - Hot Dogs on the Weber Go Anywhere

I have never actually been to a Shake Shack but I was reading through their menu online and figured I would give this hot dog recipe a shot.  They cook their dogs on a flat top so thats why I used a cast iron pan. 


Their cheese sauce is very different but I figured a highly process cheddar would be close enough. The ale marinate shallots were completely awesome on this dog.  I would say try them first without the mustard.  I really hope you give this one a try! 

 

2 all beef hot dogs
Shallots
Ale - I used Bass Ale
Flour
Kosher Salt
Freshly Cracked Black Pepper
Highly Processed Cheddar Cheese

Smoked Herb Rubbed Chicken Recipe - How to smoke a whole chicken with the Smokenator

I cooked up these birds for the Worldwide Hardcore BBQ Event 2015 on Saturday, February 7th, 2015.  This was such a great event, seeing what people from all over the world cooked as part of this event was awesome!   
The Worldwide Hardcore BBQ Event 2016 is on January 30th, 2016.  I cannot remember exactly how cold it was but it was during our 5 feet of February snowfall. 
 


 



 
Grind 2 cloves of garlic with a pinch of kosher salt and some black pepper in a mortar and pestle to make a paste.  Chop ½ C of fresh herbs – I used pineapple sage, thyme and parsley.  Add the chopped herbs, along with 1/3-1/2 C olive oil and the zest of one orange to the mortar.  Mash everything into a paste.

Season the chickens inside and out with salt and pepper.  Spread the wet rub all over the outside of the birds.  Put 1 half of an orange inside each chicken.
Cook at 400 for about an hour and a half or until the internal temperature reaches 170 degrees Fahrenheit in the thigh.
Let rest 15-20 minutes before carving.
Applewood
2 Fryer Chickens
1 Orange, zested and halved
2 Cloves Garlic
Kosher Salt
Freshly Ground Black Peppe
½ Chopped Fresh Herbs
1/3 C Olive Oil

Wood Fire Roasted Tomato Margherita Recipe on the KettlePizza

Let me start this off by saying this was by far the best way I have ever cooked tomatoes!  I fire roasted them in the KettlePizza as it was coming up to temperature for about 15 minutes.  I took them out when the oven was about 550.  I noticed that putting these in the oven as it was coming up to temp, it took a bit longer for the KettlePizza to get to the pizza temp that I like to cook at (about 650 degrees).
I had to throw another log on before I threw the pizzas on.  This pizza screams freshness. 










Pizza Dough
Roma Tomatos
Basil
Olive Oil
Salt and Pepper
Mozzarella Cheese

Homemade Crouton Recipe - How to Make Croutons for Soup

I always have old rolls/bread laying around and what better to do with that, then to make some croutons.  I have done these in the oven and I can tell you they are so much better on the grill.  There really is no comparison.



These are the perfect addition to any salad/soup! I really like them in a Guinness French Onion SoupCube up the stale bread and coat lightly with olive oil.  Toss in all the seasonings and throw them on indirect heat for 20-30 minutes.

Maple Bacon Wings Recipe - How to Hickory Smoke the Best Wings on the Planet

Some have said these wings were cosmic!  These are by far the best wings I have had since the last time I grilled wings.  And they rank right up there with Buffalo wings. 

Cook bacon by your preferred method and set aside.


Set your grill up for indirect cooking putting a drip pan on the indirect side.  This will help with clean up since the wings are very greasy.  While the pit is coming up to temperature, separate the wings if necessary and season with salt and pepper.

Clean and oil grill grates and put the wings over the drip pan.  Cook at about a 450 dome for maybe 30 minutes before you check and flip. 

While the wings are cooking, its time to start the sauce.  Melt the butter over medium heat and add the garlic.  Cook about 30 seconds and add the rest of the ingredients.  Simmer for about 30 minutes or until it has thickened and reduced by about 50%.

Cook the wings until skin is crispy - place over direct heat to crisp the skin if necessary. 

Remove the wings and toss in some sauce with some crumbled bacon.


4 Sliced Thick Cut Slab Bacon
4-5 lbs Chicken Wings
1 T Butter
1 Clove Garlic, Minced
1/2 t Red Pepper Flakes
1/3 C Maple Syrup
2 T Dijon Mustard
1/4 C Soy Sauce
1/4 C Mirin
2 t Worcestershire Sauce
2 t Cider Vinegar
Hot Sauce - to taste (I used about 3 T)
Freshly Cracked Black Pepper

Maple Pancake Breakfast Sandwich recipe - Bacon, Egg and cheese on maple pancakes on the Euro-Q

 Super simple sandwich that I made just to play around with the new egg rings I received.  Plus this is the first video on my new to me Weber Genesis Silver that I picked up on craigslist for 40$.  I love the new grill...not sure how old this Weber is but it is a solid grill and will be used as my outdoor griddle.
Let me start by saying these sandwiches completely rocked.  I will be making many more versions of these.  Even with very little maple syrup the flavor really comes through in the pancakes.  The pancakes are so light and fluffy.  They make a perfect bun for a breakfast sandwich.
This sandwich I guess is kind of like a McGriddle....even though I have never had one I really cant speak to that.  I really hope you give this recipe a try!

To start off make your favorite pancake batter and preheat your griddle to a medium heat.  You do not want the griddle to hot as these pancake buns are thick and you want them to cook through.  Unless, you like gooey pancakes....but that is just not my thing.

Cook 1 strip of bacon per sandwich.  After the the bacon is cooked, wipe down the bacon grease and spray some cooking spray on some egg rings.  Place the egg rings on the griddle and let them heat up a little.

Fill the egg rings about 1/4 of the way up with batter and then drizzle in some maple syrup.  Top with more batter and cook for a few minutes.  Use a butter knife to loosen the pancakes from the egg rings, if necessary.  As you can see in the video one did not stick at all.  Flip the 'buns' and add another egg ring to the griddle to heat up for the egg.

When the pancakes are done, add 1 egg to the egg ring and break the yolk.  add about half a cup of water and close the grill to steam the egg (you could also use something to cover the egg if you are not cooking on a gas grill).  If done right the top of the egg will be partially cooked and its now time to flip and finish cooking the egg.

After you flip the egg place 1 piece of cheese on the top to melt a little.

Assemble the sandwich as shown in the pictures.

For each sandwich:
Pancake buns infused with maple syrup
1 piece of bacon
1 egg
1 slice of processed cheddar cheese

4 Wood-Fired Personal Pizzas cooked in 20 minutes (total time) on the Kettlepizza - How to cook on the Kettlepizza

Here is a quick video on how to use the Kettlepizza.  I cooked 2 pepperoni pizzas and 2 smoked sausage and diced peppers pizzas in 20 minutes total time.  I did not reload charcoal or hardwood during this cook.  This is an excellent way to cook pizzas on the grill.  



I fired up one mostly full chimney of Kingsford Blue, when ready dumped in a horseshoe banked around the back of the kettle.  I added 2 applewood logs and put the kettlePizza attachment in place.  I check on it 20 minutes later and it was perfect pizza temp.  
First pizza (sausage and peppers) went on at about 650 degrees and came out 3.5 minutes later at about 700+.  Second pizza went on at 700+ and was in that range for the whole pie...I probably took it off in 3 minutes.  These went really fast and I forgot to take notes.  
 The third pizza went on just under 700...I probably could have added one more piece of wood to spike the temp but really wanted to know how many pizzas I could cook on 1 load of charcoal and 2 pieces of wood.  I am guessing if I had all the dough rolled out and ready I could have gotten 5 pizzas done with the amount of fuel I used.  
The fourth pizza went on just under 600 and cooked in about 4-5 minutes.  All of the pizzas were excellent.  It really helps to have everything prepped ahead of time and 2 pizza peels is a must.  I would like to have an aluminum one as well.

Kettlepizza Unboxing, Setup and Installation - How to install a Kettlepizza Deluxe

Here is a quick guide to installing the KettlePizza for the first time. 
When I shot this video I was very disappointed that all the pizza dough I had was frozen solid.  I managed to get some dough out and defrosted it for a night cook.  I cooked 3 or 4 pizzas....I cannot really remember exactly. 
I threw the first one in when the thermometer said 550 (I was kind of anxious) - it took about five-six minutes to cook.  Next one went in at 650 - this was was about four and a half minutes. 
The last 2 the thermometer read well over 700 and took in the 3.5 minute range...gotta watch it closely for the first few cooks before you get a handle on how fast they cook.
I cannot wait to cook Napoletana and Margherita pizzas on the Kettlepizza!  I plan on doing them and a video as soon as the weather isn't so bitter.  My next video is 4 pizzas on the Kettlepizza in 20 minutes.
